Simple & Massive Grilled Rib Steak
I picked up a massive two-and-a-quarter inch thick rib steak from Prime Meats delicatessen yesterday, and grilled up a very simple and tasty weeknight dinner. This one should make it into your summer rotation... It's so easy! Here's the recipe:
Ingredients:
• 1 rib steak on the bone, 2 to 2.5 inches thick (you'll need to go to a butcher for something this thick)
• 2 tsp olive oil
• 2 tsp chopped garlic
• 2 tsp fresh pepper, coarsely ground
• 1 tsp sea salt, coarsely ground
• Your favorite salad fixings
Process:
• Heat your grill to very high
• Meanwhile, coat your steak in the olive oil, then press in the garlic and black pepper evenly on all sides of the steak
• When the grill comes to temp, clean and oil the grates
• Sprinkle the steaks with the sea salt right before you put them on the grill
• Sear the steak over the hottest part of the grill for 3 minutes per side. Watch for flareups!
• Move the steak to a cooler part of the grill (on my gas grill I turned off the burner directly underneath the steak and left the other 2 on high)
• Cook for 6-8 minutes per side, until an instant read thermometer reads 125-130 for medium rare
• Remove steak from grill, and cover loosely with foil. Let stand for 5-10 minutes
• While the steak rests, make your favorite salad (mine was mixed greens, tomato, cucumber, and carrots with a balsamic dressing)
• Slice the steak against the grain discarding major fatty pieces, and serve alongside a big ole plate of salad
Optional: I used a foil pack of hickory and apple wood chips on the grill which added a hint of smokiness to the steak, but this is not necessary, especially if you're grilling over charcoal.
